For those of you who don’t know, my hometown is Washington, D.C. Home of the President, Monuments, Smithsonian, political movers and shakers, Go-Go music, and most importantly, Mumbo Sauce.
I grew up on this sticky sweet sauce that is served with fried chicken wings or crinkle cut french fries, in just about every Chinese carry out in the city. “Sauce on or on the side?” is what you’ll hear when placing an order from the cashier behind a bullet proof glass. There are different versions of Mumbo sauce as each carry out puts their own unique twist on it.
My favorite comes from Wings N More Wings carry out on Benning Rd. in N.E. D.C, my old hood. It is this version that I have recreated in my home kitchen 3,000 miles away in Los Angeles, CA. Yes, I still get cravings for it, and until I am able to hop on my private jet to D.C to score some, I have to improvise.
