I threw this recipe together, literally, on Monday while I was taking a break from typing up recipes, uploading food pics and conquering the World. I needed something quick and satisfying so I rummaged through my fridge and found some unlikely ingredients to put into a quesadilla. A jar of Roasted Red Peppers and my Gaia Goodness Banana Mango Ketchup. “Hmmm” I wondered as I shrugged and decided it was worth a try since (shameless plug) my ketchup has proven to be delicious on EVERYTHING I’ve tried it on.
And what do you know? I hit the jackpot once again. It was SLAMMIN’ as my one of my besties would say. You know who you are 😉 And, it only took me 7 minutes to make it. This quesadilla would be perfect for parties as hors d’oeuvres or a main course served with roasted corn and a mixed green salad. I’ll definitely be breaking these out at the next gathering.
