I have been plugging away at developing my Indiegogo campaign for several months now and the last couple weeks have been exciting, extremely busy and quite exhausting, but I wouldn’t change it for the world. And NOW the time has finally come to launch it!
A lot of thought and passion has gone into this project and I can only hope that you are able to see evidence of that. I truly love what I do and I believe in passing along knowledge and sharing what I’ve learned throughout my years of conscious cooking and creative play in the kitchen.
Speaking of cooking and creative play, take a look at what I made for a quick lunch today. It was deeelicious and oh so satisfying. It even boosted my energy and helped me create this post!
Quick Creamy Coleslaw and Rotisserie Chicken Sandwich on Toasted Ciabatta
Ciabatta bread toasted and sliced in half
Rotisserie chicken slices (I used the pre-cooked store bought kind)
2 cups Broccoli and Red Cabbage slaw shredded (I used the organic pre-packaged kind)
1 Tbsp Mayo
1 Tbsp Horseradish
1 Tbsp Banana Mango Ketchup or Mango chutney
1 tsp Whole Grain Mustard
1 tsp Raw Apple Cider Vinegar
1/4 tsp Cayenne Pepper
Salt and pepper to taste
Tomato slices and chopped fresh basil to dress sandwich
1. Slice the Ciabatta bread in half and place in the toaster on straight on the rack of a 350 degree oven.
2. Cut a few slices of the chicken and set aside
3. In a large bowl mix together mayo, horseradish, BMK or mango chutney, mustard, vinegar, cayenne, and salt & pepper.
4. Toss in shredded broccoli and cabbage, combine thoroughly
5. Place chicken slices, tomatoes, and basil one slice of the Ciabatta bread
6. Top with the coleslaw and other bread slice
