Green Eggs Breakfast Sandwich

Pesto on sandwich

2 eggs

1 tsp sour cream

1 slice Swiss or Provolone cheese

Sliced green tomatoes

¼ cup Easy Walnut Pesto

Two slices whole grain toast

Sea Salt

Black pepper

This makes one sandwich.

Whisk eggs and sour cream in a bowl. Heat 1 tsp of butter or olive oil in a skillet. Pour in eggs and cook for about 10 seconds then flip with a spatula. Add cheese and turn off flame. Cover skillet with a lid and give the cheese a moment to melt. In the mean time, toast and butter your bread. Now you are ready to assemble your sandwich. Add the green tomato first, then egg and cheese and top it with the pesto and the other toast slice. Enjoy!!
