Open Faced Salad

1 slice whole grain toast

1 boiled egg sliced

Smear of cream cheese or my cream cheese yogurt spread

4 cucumber slices

4 tomato slices

A couple spinach leaves

Red onion slices

Sea Salt to taste

Cracked Black Pepper to taste

This recipe yields one serving

Smear cream cheese on a slice of toast and assemble spinach, tomato, cucumber, red onion, salt and pepper and top with the boiled egg slices. Enjoy!

Tip: you can also use a fried egg. I’ve been doing that over the past couple days and it’s delicious!
