5 cups greens rinsed and dried thoroughly (I like to use a blend of kale, mustard, turnip, and spinach. But use whatever you have on hand)
2 Tbsp Grape seed or Olive Oil
¼ tsp Nutmeg
1 tsp dried Thyme
1 tsp red Pepper Flakes optional
Sea Salt and Black Pepper to taste
Heat oil in a skillet over a medium-high flame. (make sure the pan is not too hot or smoking.)
Add in a handful of greens. STAND BACK!! The oil will pop so be careful.
Fry until all the greens are tender. Some greens will even be a little crispy which is great because it will add a fantastic crunchy texture.
Sprinkle a bit of each spice and seasoning over the greens once they are cooked down a bit.
Repeat this process, adding more oil to the skillet as needed, until all the greens are cooked.
I sauteed some onions and peppers too! Here is the finished product.
