Chicken and Apricot Salad

Chicken and Apricot Salad

2 cups store-bought pre-cooked Rotisserie chicken shredded

1/2 cup dried apricots chopped

1/4 cup green onion

1/4 cup celery

1/4 tarragon chopped

1 Tbsp. light cream cheese

1 Tbsp. sour cream

Shred chicken from the bone with a fork. In a bowl, soften cream cheese and sour cream until smooth. Add chicken, apricots, green onion, celery and tarragon to the bowl and fold until all ingredients are combined.

This recipe yields 4 servings

Trick #1: This salad tastes great served with avocado slices and it makes a great low-carb lunch that is protein packed and very filling.

Trick #2: This salad also makes a great party hors d’oeuvre served with crackers or on your favorite bread with sprouts and cucumbers. For a fresh tasting tea sandwich, cut into triangles and serve. Just increase the ingredients for the number of servings you’ll need.  Your guests will love it!

Wine pairing: Muscadet, Rose champagne, Riesling
