1 link Apple, Chardonnay Chicken Sausage (or any smoked sausage), cut in 4 thin slices
tsp. Sun dried Tomatoes with oil
2 tsp. Goat Cheese softened
2 Tbsp. Olive Oil
This recipe yields 1 serving.
Coat a skillet with a little bit of olive oil or non stick cooking spray. Heat the skillet over medium flame. Add sausage slices to the skillet and heat through on both sides for about 2 minutes. Most smoked sausages are fully cooked and come in links. Slice them thin enough to fit on the sandwich. Lightly toast bread slices in toaster. Allow to cool a bit and then smear one side of both slices of toast with some goat cheese, add sun dried tomatoes (be sure to drizzle on some of the oil from the tomatoes), add the sausage slices and top with the second piece of toast. Heat some more oil in the same skillet over a medium flame. Put the sandwich in the hot skillet and grill it for about 3-5 minutes on both sides or until it turns golden brown. You may have to add a little more oil when flipping the sandwich to grill on the other side. Cut the sandwich into fours, squares or triangles, and enjoy!!
Tip: This sandwich makes a great breakfast, lunch or dinner. Add some fruit or a side salad for breakfast or lunch. For dinner pair it with soups like, butternut squash or creamy red pepper. Mmmm!!
